The website and every email address on the domain stop working. Most registrars then hold it in a grace period where you can still renew, often at a higher price, before it is released and anyone can register it.
Only if the card on file is still valid and the registrar can reach you. Expired cards and old email addresses on the registrar account are a common way businesses lose a domain they meant to keep.
A setting at your registrar that stops the domain being moved to another registrar. It is free and should be on unless you are moving the domain yourself.
Some country registries do not publish expiry dates in the public record. Your registrar's account always shows it.
